Ingredients

  • Overnight soaked beans:
  • 3 Cups 3 dried Pinto Beans

  • 1 TBLS 1 Salt

  • 4x 4x Water to cover beans, for soaking

  • Add hydrated beans (minus soaking water) to Instant Pot:
  • 1 1 Ham bone

  • 1 1 Rinsed hydrated beans

  • 1 1/2 TBLS 1 1/2 Salt

  • Water, cover to 1/2″ above beans

  • Add cooked beans to large skillet:
  • 1 1 medium Onion, chopped

  • 2 TBLS 2 Bacon drippings

  • Salt, to taste

  • Pepper, to taste

Directions

  • Overnight soaked beans
  • Begin by soaking the pinto beans overnight in water, using four times the amount of water to beans. Add a tablespoon of salt to the soaking water. The beans will swell to at least three times their original size.
  • Add hydrated beans (minus soaking liquid) to Instant Pot
  • After soaking, rinse the beans. Place the beans in an Instant Pot with the ham bone and 1 ½ tablespoons of salt. Add enough water to cover the beans by half an inch. Cook on high pressure for 25 minutes, then allow a natural release. Remove 1 to 2 cups of the cooking liquid and set it aside. Take out the ham bone, returning any meat to the beans. Mash some of the beans to your desired consistency.
  • Add cooked beans to large skillet
  • Next, heat the bacon drippings in a large skillet and sauté the chopped onion until it begins to turn golden. Add the mashed beans and simmer until the mixture thickens to a watery refried bean consistency. It will continue to thicken as it cools. Feel free to mash more beans with your spatula for a creamier texture.
  • Season and Enjoy!
