Life can throw unexpected curveballs at you, but you keep rolling with the punches.

Raising my special needs daughter, with her numerous health and developmental challenges, hasn’t been easy. Chronic stress is part of the journey, often standing in the way of health and wellness.

That’s why I created this website: to share my personal journey of discovering who I am beyond the role of caregiver. Here, I document my health journey, the lessons I’m learning, and my deep dives into achieving lasting wellness.

Why We Do What We Do

My journey started with my forever child, Valhalla. When she was two years old back in 2003, we embarked on a gluten-free lifestyle, out of necessity, managing a host of food allergies and intolerances. Over the years, I’ve learned countless lessons in cooking, baking, and living well with these challenges. I’m here to share that knowledge with you. In 2014, I too started living gluten-free for my health. And although Valhalla has had celiac disease all along, her diagnosis only came in 2023.

I love creating in my kitchen when I am feeling well and not stressed.

This website has been built to share with you my own extremely complex health journey. I am one of the most complex individuals that most doctors have come across. The rarest of rare unicorn. I realized a long time ago that if I wanted to start feeling better, I needed to take charge of my own health. Not relying upon others to do so for me. As I have dived deeper into learning and research for myself, I have come to realize that medical professionals only know the things they have been taught and exposed to in their practice of medicine. They don’t know what they have not come across. They don’t know what they don’t know. So who do I pay attention to in the medical world? We have this amazing resource at our fingertips, the internet. The internet helps us to link up with others who have dived deep into research and asking questions. My health journey has led me to finding some of these individuals. Paying attention to what they are saying. Then asking if it makes sense. I have consistently found a few individuals who are very good at doing their research and understanding how the human body works. They also tend to write and talk in such a way that the layman, like you and I, can start to understand how our bodies work. So we can start to piece together our own individual health. On this website I will be sharing those resources as I blog about different parts and aspects of my own complex health journey.

You will get a snapshot of my daily life through these blogposts, through the recipes and How To cooking tutorials that I am creating here. So please bookmark my site. Join my email newsletter, where you can stay in the loop when I post new recipes and blog about my own health journey here. Also, I have created a great resource. A private community on this site for you to be able to share what you are learning and get support from others with similar challenges. Right now the primary topic is Gluten Free Living. But as this site develops, and I have the time, I will be adding other health challenge topics that I understand and live through myself. Topics like gut health issues with microscopic colitis, IBS, SIBO, nutrient deficiencies, fungal overgrowth, etc. Plus other topics like my severe respiratory disease: Aspirin Exacerbated Respiratory disease. If you have a topic you would like to add to the private group, please reach out to me. We can discuss it. This is not a group to join and then advertise your own stuff.

As time goes on I will create mini courses, for a small fee, to help you navigate some of these health issues that I am very familiar with. Please keep in mind that I am not a medical professional. The things you see on this site, you need to then do your own research on. Use this site to help you to understand your body better. Then when you do find others with the expertise that you know you need, for specific health related issues, you can go to them. Always keeping in mind that you have the final say on what happens to your body.

I will never add advertisements to this site. There will be affiliate links to things that I have used. In the recipes I will probably add an Instacart link so that you can buy your groceries locally based off of the recipe. Keep in mind that I cannot be held responsible for those foods. You need to check the packaging yourself. To verify that the food is safe for you to consume, based on your own specific health issues. For example: celiac disease, food allergies, etc. Also checking for cross contamination.
